OK, here are the boys mixing a little za'atar and a little salt and twisting shut the pieces of paper (sometimes newspaper) into a tiny bundle.You get one when you buy a sesame-covered oval "bageleh" from the Arab seller's cart.
He is always at the Jaffa Gate.
Even my toddler granddaughter knows how to dip her bageleh in za'atar before each bite..
